Dang this bar is just so gorgeous.
I created a tangy raspberry ganache out of Valrhona’s gorgeous Raspberry Inspiration and then wrapped it all up in the couverture for a raspberry explosion of flavour. Tangy and sweet was not good enough for me so I brought in a little FIRE with a gentle dusting of cayenne on the back of the bar. It brings an intensity to the bar that is just a touch of heat to cut through the sweetness of the raspberry.
